Thirikwa Cooperative brings together around 3,700 smallholder farmers who deliver their cherries to the cooperative’s sole processing facility, Gakuyu-ini, established in 1997. The coffee is fully washed, carefully sorted and fermented overnight before being graded and dried on raised beds. The cooperative also prioritises sustainability, recycling processing water and returning coffee pulp to farmers to be used as organic fertiliser.

The recommended brew methods for this specific coffee include filter, plunger, AeroPress and pour-over.
As a pour-over using the (recommended) recipe below, we are tasting sugared berries, red grapefruit and black tea.
Our recommended recipe follows a 1:15 ratio (i.e., 15g coffee : 225g 92°C water) – it is also worth noting that in order to get the best out of this coffee, we recommended drinking it black (i.e., without the addition of milk).
