Grown on the 13-hectare La Divisa Farm in Circasia, Quindío, this Gesha was produced by Sebastian Gomez and his family, whose connection to Colombian coffee spans more than three decades. After returning to Colombia in 2014, Sebastian shifted the farm’s focus from producing volume to crafting exceptional specialty coffees, planting varieties such as Gesha and Pink Bourbon.
At 1,700 metres above sea level and surrounded by native shade trees, La Divisa offers the ideal conditions for producing coffees with outstanding clarity and complexity.
Only perfectly ripe cherries are selected before being floated and meticulously hand sorted to remove defects. The cherries then undergo a 30-hour underwater fermentation before pulping, followed by gentle washing and carefully controlled drying until the ideal moisture content is reached.
This thoughtful approach to processing allows the distinctive character of the Gesha variety, first identified in Ethiopia in 1931 and introduced to Colombia in 2005, to shine through with elegance and balance.

Brew Guide & Tasting Notes
We’ve roasted this coffee specifically with filter brewing in mind.
FILTER
As a filter coffee try the following 4 pour recipe in a V60 pour over:
1:16 ratio of coffee to water (16g coffee to 240g water) at 95c.
Pour 1: 45g water 45 seconds bloom (3 times the weight of the coffee)
Pour 2: to 110g with a swirling motion – start the 3rd pour when all the water has passed through
Pour 3: to 175g – pour directly in the center of the coffee – start the 4th pour when all the water has passed through
pour 4: to 240g total weight – aim to finish at around 3:30
We’re tasting sweet lime and caramel with light florals.
